If you're asking, you'll most likely be after the binaries. But here's the difference:

Binaries

That's the executable package, the one with the files you should copy to your device.

Sources

Source code files, for developers.

And what about PSI?

PSI stands for PalmSource Installer. All versions starting from RC1 are released in a "PSI Installer" Package, which is a file that installs LJP automatically to your handheld. Just hotsync the PRC and that's it! Just make sure there is an SD card inserted into the first slot.
